First smoke in awhile. Had a perfect burn. A tighter draw that I like. Flavor was good but didn't change much from a leathery/espresso flavor.

Hey all. I tried doing ribs unwrapped this past weekend. While a few of the bones were perfect there were areas that were dried out (about 4.5 hours at 225. Internal temp 201). Anyone have the technique down for doing spare ribs without wrapping?
